Legend accords the "invention" of maple syrup to a cooking accident by American Indians. Tribes often cooked vegetables and meat in fresh maple tree sap, due to its natural sweetness. An un-attended pot resulted in sap that had boiled down to a thick, sticky, sweet-tasting golden goo.
Making pure Vermont Maple Syrup is an arduous task. It requires 40 gallons of boiled tree sap to make a single gallon of syrup! Tending those stoves is not for the faint or timid.
